Introduction

Bean soups and stews crock pot are a great option for when you need to come home to a nice hot meal all ready to go and you don’t have a lot of prep time in the morning either. I like to put on a bean soups and stews crock pot about once a week and make enough to last me for 2-3 meals. Plus it’s a great way to get excellent protein with or without meat and they are cheap in a day with rising grocery costs.

Here are some of my favorite bean soups and stews crock pot recipes:

  1. Vegetarian chili- I use pinto or red beans with carrots, onions and celery, vegetable broth or water, canned tomatoes and chili seasoning. Just throw everything into the crockpot and cook all day on low.
  2. White bean soup- For this soup I put in white beans- either raw or canned with onion, celery and carrot, chicken broth, and ham. You can also throw in some spinach for even more vegetables or use vegetable broth instead of chicken broth and leave the ham out to make it vegan.
  3. Chickpea soup- Use chickpeas in place of the white beans. Otherwise it’s the same recipe.
  4. Lentils with either vegetable or chicken broth, onion, celery, and carrot. You can optionally add in tomatoes and or spinach or some cooked chicken.
  5. Chicken, tomato, vegetable, and bean soup- I like to mix some frozen chicken breasts, canned tomatoes, chicken broth, pinto beans and a bag of mixed frozen vegetables.
  6. Turkey and beans soup- use white beans or chickpeas with turkey breast, chicken broth, and onion, carrot and celery.
  7. Any combination of vegetable broth or chicken broth, carrot, onion, celery and any bean and optional other vegetables such as mushrooms, broccoli, spinach or tomatoes and or chicken, beef, ham or turkey.
