Buckwheat and Amaranth Gluten Free Pancakes

I was craving something different for breakfast so I decided to experiment with making some gluten free pancakes using both buckwheat and amaranth flours. I’ve made buckwheat gluten free pancakes before but never tried making them with amaranth flour. I happened to have some amaranth flour I bought on sale a few months ago from Vitacost and wanted to put it to good use. The result is the following recipe. Note: I was so hungry I ate all the pancakes without taking a picture, so the picture isn’t my pancakes but they did look a lot like those in the picture.

  1. 1 Cup Buckwheat Flour
  2. 1 Cup Amaranth Flour
  3. 1/2 Teaspoons of Sea Salt
  4. 2 Teaspoons of Baking Powder
  5. 4 Tablespoons of Honey
  6. 2 Eggs
  7. 2 Cups of Non-Dairy Milk (I used Almond Milk)
  8. 2 Tablespoons of Vegetable Oil ( I used olive oil but coconut oil or others would work good.)
  9. Optional: cinnamon- I mixed in a few tablespoons
  1. Mix together everything.
  2. Spoon out or ladle out onto a medium hot griddle, sprayed with cooking spray and cook until bubbles are well-formed around the edges of pancakes, turn and cook other side. Serve with warn maple syrup, or raw honey, fresh fruit or applesauce.

How to Use Essential Oils for Back to School

I like to put one drop in a glass of water and drink it, or rub a few drops on my wrists and inhale. It’s also handy to have on hand for if your child eats something at the school cafeteria that doesn’t agree with him or her and gets a bit of an upset stomach. Then he or she can rub a drop over the stomach area to get some relief.

3. On Guard Plus Capsules- These are a must have for back to school and really throughout the entire winter season. Going back to school can make your child and you more likely to struggle with a weak immune system and being around lots of people who may or may not have strong immune systems themselves can make it even worse.
