Split Pea Soup
A classic favorite soup, I've been making for years.

Ingredients
  1. 1 cup of split peas per 2 people.
  2. 1 cup of water per cup of peas.
  3. 1 cup of chicken broth per cup of peas.
  4. 2-3 carrotts sliced.
  5. 1 onion sliced.
  6. 1 ham hock or 1 pound of ham sliced.
  7. Salt and Pepper
  8. 1 Bay Leaf
Instructions
  1. Put all ingredients in a crock pot except for salt and pepper. Add in salt and pepper to taste after the soup has cooked completely or is almost done. Turn crockpot on Low to Medium for 3-6 hours.
Notes
  1. You can also add in 1-2 cups of sliced potatoes for a chunkier soup.

White Bean and Ham Soup
Another classic I've been making for years.

Ingredients
  1. 1 cup of white beans per 2 people.
  2. 1 cup of water per cup of beans.
  3. 1 cup of chicken broth per cup of beans.
  4. Salt and Pepper
  5. Thyme
  6. Bay Leaf
  7. Ham Hock or sliced ham
  8. 2-3 carrots
  9. 1 onion
  10. 1 stock of celery.
Instructions
  1. Combine all ingredients into a crockpot except for salt and pepper. When soup is done, season with salt and pepper to taste and remove bay leaf before serving. Celery is optional but adds a nice flavor.

Sunday Dinner Roast Chicken
My mom has been serving this as a Sunday dinner for years.

Ingredients
  1. 1 medium to large chicken
  2. 8-10 medium red potatoes (can also use white but I prefer red)
  3. 1 medium head of cabbage
  4. 3-5 carrots
  5. 1-2 onions
  6. 2-3 cups of water
  7. salt and pepper to taste
Instructions
  1. Place everything except the salt and pepper in a crockpot and cook on slow to medium heat for 4-8 hours. Season with salt and pepper.

Roast Salmon Dinner
Another delicious gluten free crockpot meal without chicken.

Ingredients
  1. 2-3 large salmon filets
  2. 1 onion
  3. 5-10 red potatoes (white also work I just prefer red)
  4. 1-2 pounds of asparagus
  5. Salt and Pepper to Taste
  6. Lemon Juice to Taste
Instructions
  1. Cook everything in a crockpot on low to medium for 4-6 hours except for the salt, pepper and lemon juice. Then add these in to taste. Serve with a salad.

Chicken, Tomato and Vegetable Soup

Ingredients
  1. 1 can of tomatoes
  2. 1 can of chicken broth
  3. 1 package of fresh or frozen chicken strips
  4. 1 large package of mixed frozen vegetables
Instructions
  1. Put all ingredients in a crockpot and cook on low to medium heat for 3-5 hours.
